Healthy Gingerbread Cookies for Kids ♥ Sugar-free, Honey-Free

I love baking with my Toddlers ♥ It is such a lovely, quality time we get to spend together. And Christmas time, full of these intense gingerbread aromas, is the most special of all. The only downside of all this Holiday baking is the insane amout of sugar that usually goes into the cookies. Therefore I created a healthy version of Gingerbread Cookies that doesn’t require addition of sugar or honey. Insted I added pureed dates which are naturally sweet but additionaly contain for example fiber, magnesium and potassium ♥

♥ 350g flour
♥ 2 tsp gingerbread spice mix
♥ 2 tbs cocoa powder (unsweetened)
♥ 1 tsp baking soda
♥ 1/2 tsp flaky salt (or 1/4 fine table salt)
♥ 250-270g date puree (made with 200g dried dates + 100ml water; see video)
♥ 100g butter, melted
♥ 1 large egg
