Chouquettes
I always have admired chouquettes in Parisian boulangeries. They are so incredibly light and puffy! Irresistible!
I would never imagine, these are so simple and quick to do at home! They are made of choux pastry, which is prepared by mixing the flour with boiling water. The result is amazing. 🙂
You can do them pecans, ice-cream and chocolate!

For around 12 Chouquettes:
♥ 30mL water
♥ 30mL milk
♥ 35g flour
♥ 30g butter
♥ 1 egg
1. Pour water and milk in a saucepan and melt the butter in it on medium heat. Bring everything to the boil (stir it so the bottom doesn’t burn).
2. It is not enough to just melt the butter. Instead it needs to be very hot, so that after adding the flour, the dough gets thick! Add the flour at once and stir everything until smooth on the hot stove.
3. Put the dough in a bowl and leave it rest for 5min to cool down a bit. Add the egg and mix well until smooth.
4. Put the oven on 200’C (so it’s ready, when we are ready for baking)
5. Form little bullets from the dough. You might use a pastry bag or 2 spoons. I used a simple plastic bag that I fill with the dough and cut one corner of. The bullets don’t need to have a very regular shapes (they will grow anyway and change its form to a bullet once in the oven). However it is important that they have more or less the same size (so they are all baked equally).
6. The best to decorate Chouquettes is the pear sugar. You can also use little sugar balls (but they have a less spectacular effect).
7. Bake at 200’C for around 15-20min. They should be golden brown. Eejoy! 🙂
