Baked Oatmeal Pancakes with Bananas
I was looking for an idea how to maximize the banana portion on pancakes. I came up with those banana rolls baked in the oven.
First you need to prepare the thin Oatmeal Pancakes. Next, you roll the bananas in them and bake! It is delicious with Maple Syrup and pecans! 😀

You will need:
♥ 3 bananas
♥ 90g flour (a little bit more than 1/2 glass)
♥ 3 spoons of Oatmeal
♥ 250g milk (1 glass)
♥ 1 egg
♥ 1,5 spoon sugar
♥ oil (I use rapeseed oil)
1. Mix the flour, oatmeal, milk, sugar and egg. You can use a blender. Let it rest for 10-15min (so the oatmeal gets a bit softer).
2. Heat some oil on a flat pan. Put a portion of batter to form a thin crepe. Fry on both sides.
3. Roll the banana into the pancake.
4. Bake at 180’C for around 20min. Serve eg. with Maple syrup and pecans. 😀 Enjoy! 😀
I love it how the most amazing things come from the simplest of ideas – these pancakes look great, a perfect replacement for our general marmalade/cocoa pancakes!
