Muffins with Poppy Seeds and Orange Icing
These soft & fluffy muffins are my boyfriend’s favorite. They are full of little poppy seeds and topped with an amazing orange frosting. Just perfect for a lazy winter weekend coffee break!

For 2 giant muffins you will need:
(the volume of my muffin form is 200ml)
♥ 100g butter, soft
♥ 100g flour
♥ 2 eggs
♥ 4 tablespoons homemade vanilla sugar
♥ 1 tablespoon natural yogurt
♥ 3 teaspoons poppy seeds
♥ 1 teaspoon baking powder
♥ orange zest from 1/2 orange
Icing:
♥ 4 tablespoons icing sugar
♥ 2 tablespoons orange juice
1. Using a big spoon combine butter with sugar. Add eggs.
2. Add flour, baking powder, yogurt, poppy seeds and orange zest. Combine all ingredients using a big spoon.
3. Fill 3/4 of your muffin form with the batter. Bake at 180’C for about 20-25min (if you also do such a big muffins). The muffin should rise and get golden brown.
4. In order to prepare the icing you just need to combine the icing sugar with orange juice. The muffin is perfect with a cup of coffee! Enjoy! ♥
My favorite combination for poppy seeds is lemon or orange, so these muffins must be delicious.
And I love the breakfast set, we also have it, isn’t it cute??
We haven’t use it yet to bake something, it scares me (even if you know you can do it), but now I see this, I think I won’t be able tu resist anymore 😛
