15 minutes Breakfast Recipe: Avocado with Poached Egg & Thyme
During week days the most popular breakfast we have are oatmeal and eggs. Both give us enough energy to well start the day.
I love the poached eggs because it is probably one of the quickest way to prepare them. It is also really easy to control how done they are. I like my egg yellow completely liquid whereas F. prefers it more cooked.
3 minutes of cooking gives you just enough time to slice the avocado and get some fresh thyme. 🙂

Breakfast for two:
♥  2 eggs
♥ 1 avocado
♥ fresh thyme
♥ salt & pepper
♥ few drops of olive oil (optional)
1. Put 3-5cm of water into little sauce pan. Bring it to the boil. Break the egg inside it. Cook on a low heat until all the egg white is white (not transparent anymore). Out eggs were at room temperature and took around 3 minutes for the eggs to be cooked.
2. Put the poached egg on the top of the sliced avocado. Sprinkle with fresh thyme, olive oil, salt & pepper. Enjoy! ♥
