Vegan Chocolate Mousse (VIDEO)
When I saw this recipe I couldn’t believe that it is possible to prepare the chocolate mousse using only two ingredients! All you need is a can of coconut milk and half a dark chocolate. Check out my video recipe below ♥
For 2 generous portions:
♥ 400ml coconut milk (cooled down in the fridge for at least 4h)
♥ 50g dark chocolate (I used 70% cocoa but you can use a lighter one)
♥ roasted almond flakes(optional)
Note 1: It is important that the milk is cold. The best is to leave it in the fridge overnight or for at least 4 hours.
Note 2: Choose a coconut milk which is full fat and has at least 80% cocnut in it.
1. Start by melting chocolate. Once melted, put it on the side so it cools down a bit.
2. When the coconut milk it is cold, it will be very easy to scoop out its white, solid part. (In this recipe we wont be using the liquid part but you can keep it to use in a curry, carrot soup or in your morning smoothie). Use an electric whisk to make it more airy and light. It should take 3-5min.
3. Add melted chocolate and mix it together. Transfer to 1 bigger container or into 2-4 little cops. Cover it and leave in the frige over night.
4. It tastes the best cold (straight from the fridge) and sprinkled with some roasted almonds.
