Pumpkin Oatmeal Pancakes

This recipe comes especially handy in the Halloween season when you find yourself with a lot of pumpkins and not many ideas what to do with it…
This is probably one of my favorite ways to use pumpkin. Crunchy pancakes with shallot and served with natural yogurt are perfect for Autumn or Winter.

For 3 portions you will need:
♥  600g pumpkin
♥  3 shallots
♥  2 eggs
♥  6 spoons oatmeal
♥  6 spoons flour
♥  1/2 teaspoon salt
♥  oil to fry (e.g. rapeseed oil)

1. Grate the pumpkin. Add eggs, sliced shallots and oat meal.
2. Cut everything into a thin paste with a blender. Add flour and mix everything well
3. With a spoon put the dough on a pan, form little pancakes. Fry around 3-5min on each side on hot oil. They should get brownish. After frying put on the paper towel to remove excess of oil.
4. Serve with natural yogurt and pepper. 🙂
