Rainbow Veggie Wraps
These RAINBOW WRAPS are really crepes (thin, French-style Pancakes) to which I added pureed vegetables. These are really very easy to make and my kids LOVE them. To watch my video tutorial click HERE
INGREDIENTS:
GREEN
♥ 1 cup frozen spinach
♥ Milk to fill it up to 1.5 cup (see video; 375ml = 375g)
♥ 2 eggs
♥ 1/2 cup (65g) all-purpose flour
♥ 1/4 teaspoon salt
♥ 1.5 tablespoon rapeseed oil
YELLOW
♥ 1/2 cup sweet potato or carrot (cooked or baked)
♥ Milk to fill it up to 1.5 cup (see video; 375ml = 375g)
♥ 2 eggs
♥ 1/2 cup (65g) all-purpose flour
♥ 1/4 teaspoon salt
♥ 1.5 tablespoon rapeseed oil
♥ 0.5 teaspoon curcuma powder (optional)
PINK
♥ 1 small beetroot (cooked or baked)
♥ Milk to fill it up to 1.5 cup (see video; 375ml = 375g)
♥ 2 eggs
♥ 1/2 cup (65g) all-purpose flour
♥ 1/4 teaspoon salt
♥ 1.5 tablespoon rapeseed oil
♥ 1 tablespoon lemon juice
- Start by blending the vegetables with just a bit of milk
- Fill it up with milk to get 1,5 cup of total volume
- Add the remaining ingredients and blend everything together until smooth.
