Ricotta & Spinach Ravioli

I love how simple the Italian cuisine can be. Using a few basic ingredients you can prepare an amazing and savoury dish! These ricotta & spinach ravioli, served with melted garlic butter and Parmesan cheese, are addictive!

For 3-4 portions you will need:
filling:
♥  200g frozen spinach
♥  200g ricotta cheese
♥  1 onion
♥  1/4 teaspoon salt (or to taste!)
for the dough:
♥  2 glasses of flour
♥  1 egg yellow
♥  100mL of warm water (not hot)
to put on the top:
♥  100g butter
♥  1-2 cloves garlic
♥  Parmesan (as much as you want! 😉 )

1. Sear spinach on a frying pan with some olive oil  for about 5-10min. Blend ricotta cheese and spinach until smooth in a big bowl. Add sweated onions (stir sliced onion on a hot pan with olive oil for 5min) and salt. Mix all together and put on the side. Your filling is ready!

2. Fill a big casserole with water, salt it and put on a medium hot stove (the boiling water will serve you to cook your ravioli).

3. Knead the dough. When done, divide it into 2 parts and protect 1 of them with a plastic foil from drying (it is important because dry dough is much more difficult to work with).

4. Roll out the dough into a long rectangle (thinner is better!). Now you should decide what ravioli size you would you like to do. I like both, the big one and the small one. But the small ones are a little bit more work. You can also do some small and some big one. 😀

5. Now cut the dough lengthwise and on one half put little portions of the ricotta & spinach filling. Cover it with the other half and form raviolis!

6. As soon as the first portion of ravioli is ready put them into almost boiling water. The water should not boil too strongly because that could open your ravioli. The quantity of ravioli you can put in at once depends on the size of your casserole, as there should be only one layer of them.

As soon as they get on the surface they need additional 5 min of cooking, then put them out.

7. Melt butter with freshly crushed garlic in a saucepan. Pour this butter garlic mix over the hot raviolis and sprinkle everything with Parmesan cheese. Enjoy! (and please LEAVE A COMMENT if you feel like  :D )
