Chicken baked with vegetables
It is without any doubts my favorite way of doing chicken!
It is extremely simple and comes out really savory with soft and juicy chicken!
Here again I should thank our super South African friend for inspiration! We are really thankful that his Italian mum taught him to cook so well! 🙂

We used:
♥ 700g Chicken thighs
♥ 1 red paprika
♥ 1 big red onion
♥ 2 cloves of garlic
♥ 6 little potatoes
♥ 1 big courgette
♥ 10 champignons (mashrooms)
♥ chili powder
♥ pepper
♥ olive oil
You can be quite creative with what vegetables you use. Olive oil is an essential ingredient here! It prevents everything from drying.
1. On a large flat oven dish (I simply use my oven tray) sprinkle olive oil and put the (washed and dried) chicken thighs. Slice garlic and hide it under the skin of chicken.
2. Put on entire champignons and potatoes (if potatoes are big you might cut them in half) . Slice vegetables and add to the dish. Sprinkle everything with some more olive oil and spices.
4. Bake around 45-60min (until potatoes get soft). ENJOY!!! 😀
