French éclairs with coffee pudding and chocolate
After presenting you the super simple recipe for Chouquettes it is time for another famous French dessert made with choux pastry: éclairs.

For around 3 éclairs:
♥ 30mL water
♥ 30mL milk
♥ 35g flour
♥ 30g butter
♥ 1 egg
Pudding:
♥ 250ml milk
♥ 1 egg yellow
♥ 1,5 teaspoon instant coffee
♥ 1 tablespoon (15g) potato starch
♥ 1 spoon homemade vanilla sugar (or the regular sugar)
+ few chocolate pieces for decoration
1. Pour water and milk in a saucepan and melt the butter in it on medium heat. Bring everything to the boil (stir it so the bottom doesn’t burn). It is not enough to just melt the butter. Instead it needs to be very hot, so that after adding the flour, the dough gets thick! Add the flour at once and stir everything until smooth on the hot stove.
2. Put the dough in a bowl and leave it rest for 5min to cool down a bit. Add the egg and mix well until smooth.
3. Form éclairs. You might use a pastry bag but I used a simple plastic bag that I fill with the dough and cut one corner off.
4. Bake at 200′C for around 15-20min. They should be golden brown.
5. While baking prepare the pudding. Mix milk, egg yellow, sugar and coffee in a sauce pan.
5. Mix the potato starch with 3 tablespoon of the milk mix and add it to the saucepan.
6. Bring it to the boil while stirring all the time. Leave it to cool down.
7. When everything is cooled down, cut the éclairs lengthwise and fill them with pudding.
8. Melt some chocolate and decorate your éclairs. Bon appétit!
