Crêpes (Pancakes) with Strawberry Jam & Yogurt

I remember when as a little girl I was sitting at the kitchen table while my mum was doing those delicious, soft pancakes. I was waiting for the next one while listening to our favorite radio. Also my father, when he had to stay alone with me and my brother, was always preparing these for us. Probably because they are so simple and all kids love them!

Today Polish crepes with strawberry jam is my comfort food. When I’m sick or when I feel blue, these always cheer me up! 😀

For around 4 crepes:
♥  100g flour (a little bit more than 1/2 glass)
♥  250ml milk
♥  1 egg
♥  50g of natural yogurt
♥  1 tablespoon of homemade vanilla sugar
♥  Oil (I used rapeseed oil)
to serve with:
♥  Strawberry jam + yogurt

1. Mix all the ingredients for the batter (you can use a blender).
2. Pre-heat a teaspoon of oil on a flat pan. Put a portion of batter to form a thin crepe.
3.  These crepes are very soft (it’s why I love them so much). It might be difficult to turn them on the other side. Before you start, make sure the first side is already done enough. A large spatula is also very helpful. Often first crepe is the most difficult and next work much better! If the second crepe brakes also, you might add a tablespoon of flour into your batter. But don’t add too much of it because your crepes will lose their softness!
4. You can have them with strawberry jam and some yogurt. Enjoy ♥
