These are soft with an amazing homemade whipped cream. They smell like Christmas.
It’s an idea for a coffee break during cold winter day!
For 6 little muffins you will need:
♥ 100g flour
♥ 1 teaspoon baking powder
♥ 70g butter, soft
♥ 2 eggs
♥ 1 tablespoon natural yogurt
♥ 1/2 cup brown sugar
♥ 1 tablespoon cocoa powder
♥ 2 teaspoons gingerbread spice mix
♥ 150ml heavy cream (at least 30% fat), cold
♥ 2 tablespoons mascarpone cheese
♥ 1 teaspoon orange zest
♥ 1 tablespoon icing sugar
♥ 6 little gingerbread cookies
1. Combine the sugar with butter. Add the 1st egg and combine with the butter. Add the 2nd egg and combine it with the butter. Add flour, baking powder, yogurt, cocoa powder and spices. Mix everything with a spoon.
4. Fill muffins forms until 3/4 with the batter and bake them at 180′C for about 15min.
5. While baking whip the cream with icing sugar. It will be easy if the cream will be cold (in the fridge for at least 2h). When cream turned stiff add mascarpone cheese and orange zest. As soon as the muffins cool down decorate them with the cream. Stick a cookie on the top.
